I'm only making one bubbles recommendation this year and it's the Bruno Paillard Extra Brut Première Cuvée Champagne ($60) because it's been years since I've had a sparkling wine this complete. Platinum blonde with seemingly endless microscopic bubbles, the bouquet is surprisingly rich, with yeast, toasted almond, and an inviting allure - and it only gets better from there. The richness continues in the mouth with full-bodied delivery echoing the aromatics. Voluptuous, delicious, and incredibly satisfying, this is a serious Champagne novices and aficionados alike will appreciate for its approachability and cerebral qualities. The dry, clean finish is a feat, especially considering the heft of this wine. Universally appealing and excellent. 94 points. (Sample)
